  • Winemaking:

Elaborated following the Purist Philosophy of Lidio Carraro. Harvest in mid-February, the grapes were whole pressed, to obtain the must. It underwent maceration for a few hours to extract compounds that enriched the aroma and body of the wine. Prior to the start of the fermentation, the wort was cold decanted to naturally clarify and followed the fermentation at controlled temperature for about 15 days. Did not perform malolactic fermentation to preserve its natural freshness and passed by natural stabilization during the winter. After that time, the must was added from the same grapes to increase the sugar content naturally. It was thinning in stainless steel tanks until bottled in August 2018.
