Winemaking:
Elaborated following the Purist Philosophy of Lidio Carraro. Harvest in the mid-February. The grapes were stripped for a brief maceration of the must with the peels to obtain color. After 12 of maceration, it was pressed and fermentation in stainless steel tanks with controlled temperature for about 15 days. Did not perform malolactic fermentation to preserve its natural freshness. It remained on the sur lies during its thinning which gave it volume and breadth in the mouth. After that time, the must was added from the same grapes to increase the sugar content naturally. It was thinning in stainless steel tanks until bottled in August 2018.
