Tasting Notes

  • Color:

    Bright and intense ruby red with violet reflections. Lazy tears, marking their concentration and consistency.

  • Aroma:

    Mysterious and provocative, it has notes of ripe black fruit, blueberry, plum, evolving into notes of spice, tobacco and cocoa. It enchants by its complexity and strength.

  • Tasting:

    Sensation of vivacity and density throughout the palate. Its ripe tannins provide a pleasant persistence in the aftertaste. A wine of impact and personality.

  • Pairing:

    It fits very well with red meats in general, such as game, lamb and dishes with remarkable flavors and matured cheeses.

  • Winemaking:

    Soil and microclimate: Granitic-sandy soil, low organic matter content and excellent drainage. Vineyards: The vines are managed through the espalier system, with a maximum production of 1,2 kg/plant and planting density of 4000 plants/ha. In order to obtain the correct vegetative balance of the plant, green prunings have been applied to establish a good activity of the photosynthetic leaf wall, and the production of grapes per plant has been reduced. Harvest: Manual harvesting with selection of bunches in the vineyard. Winemaking: Elaborated by the Teroldego grapes identified through the plots of soil mapping to compose a wine of unique originality. The fermentation occurs in stainless steel tanks, following the traditional winemaking system, during a total maceration period varying between 16 to 24 days. A cold pre-fermentative maceration is carried out for about 60 hours before fermentation. The wine stays for another 12 months in the tanks until it is bottled. This wine takes at least 4 years of thinning in the bottle before being launched to the market. The wine is not filtered in order to keep its natural characteristics intact.
