  • Winemaking:

Elaborated following the Purist Philosophy of Lidio Carraro. Manual harvesting with selection of bunches in the vineyard. The grapes were whole pressed, to obtain the must. Prior to the start of the fermentation, the wort was cold decanted to naturally clarify and followed the fermentation at controlled temperature for about 20 days. Did not perform malolactic fermentation to preserve its natural freshness. It remained on the sur lies during its thinning which gave it volume and breadth in the mouth.
