Tasting Notes

  • Color:

    Straw yellow with greenish reflections.

  • Aroma:

    Intense and springy aromas as white roses, melon, sicilian lemon, pear, green apple and lemon balm.

  • Tasting:

    A good volume in the mouth, great balance, with a delicate citric aftertaste.

  • Pairing:

    Poultry meat, salads, vegetarian food and cocktails.

  • Variety:

    This Chardonnay (80%) is complemented with the grapes Riesling Italic (15%) and Moscato (5%) to give balance and a personality to this wine.

  • Winemaking:

    Soil and microclimate: Granitic-sandy soil, good drainage and correct organic matter that allows a balanced development of the vines. Harvest: Manual harvesting with selection of bunches in the vineyard. Winemaking: Elaborated following the Purist Philosophy of Lidio Carraro. Harvest in mid-February, the grapes were whole pressed, to obtain the must. It underwent maceration for a few hours to extract compounds that enriched the aroma and body of the wine. Prior to the start of the fermentation, the wort was cold decanted to naturally clarify and followed the fermentation at controlled temperature for about 20 days. Did not perform malolactic fermentation to preserve its natural freshness. It remained on the sur lies during its thinning which gave it volume and breadth in the mouth. Bottling in January 2017.
